Un bougnat est un immigrant installé à Paris, originaire du Massif central et plus précisément de l'Aubrac, de la Viadène, des Monts du Cantal, de la Planèze et de la vallée du Lot. Après avoir exercé la profession de porteur d'eau (pour les bains) au XIXe siècle, les immigrants de ces hautes terres vont s'orienter progressivement dans le commerce du bois et du charbon (livré à domicile) ainsi que dans les débits de boisson (vin, limonade). Cette reconversion se fit sous le Second Empire, quand le réseau d'alimentation en eau de la capitale commença à desservir les étages des immeubles. (Source: Wikipédia)
