Jean Gabriel Mondié fut kinésithérapeute, comme ses illustres prédécesseurs Ousmane Sow et jean pierre Ceytaire, puis ostéopathe. De cet exercice, il a su retenir la force de l'expression anatomique à l'instar des Maitres italiens du XVIème et XVIIème siècle.
Passionné d'art, il réalise en 1998 un ouvrage sur le peintre Philippe Grisel puis il étudie la restauration de tableau avant de s'adonner à la peinture ( à partir de 2007) et depuis 2019 la sculpture s'impose comme une évidence, tant le modelage de la terre fait écho au travail que réalisait la main dans son exercice professionnel.
Depuis 2011 expositions personnelles et de groupes se succèdent. En 2011, il obtient le premier prix de peinture du conseil départemental de l'Oise au Salon d'automne de Compiègne.
Des lors ses influences seront Le Bronzino, Sergio Ferro... pour la peinture et Le Bernin, igor Mitoraj... pour la sculpture.
Il fait sienne la pensée répandue au XVIIIème siècle (convenant autant à la peinture qu'à la sculpture) exposée ainsi par Winckelmann : "Peindre des idées par des images. telle est la définition de l'allégorie, tel est le but de la peinture...Le stade suprême de cette abstraction sera donc la peinture de l'idée. L'idéal (l'idée du beau) sert à peindre l'idée pure (la beauté)"
