Jimmy Katz è nato a New York City nel 1957 e ha studiato fotografia con John McKee al Bowdoin College. Negli ultimi 30 anni, Katz ha lavorato su oltre 580 progetti discografici, oltre 200 copertine di riviste e centinaia di articoli editoriali – più di qualsiasi fotografo moderno che documenta il jazz. Per promuovere al meglio questa forma d'arte, Katz ha recentemente utilizzato un approccio integrato nel suo lavoro, combinando fotografia, video e audio di alta qualità.
Nel 2018, su sollecitazione degli amici, Katz ha fondato Giant Step Arts, un'organizzazione senza scopo di lucro che documenta alcuni dei più importanti musicisti jazz di quest'epoca. Katz progetta progetti, si occupa di fotografia e design con sua moglie Dena. I musicisti hanno la proprietà dei maestri e possono vendere la loro musica.
Katz ha ricevuto l'Award for Excellence in Photography dalla Association of Jazz Journalists Association nel 2006 e nel 2011. Ha lavorato con numerose figure storiche del jazz, tra cui Ray Charles, BB King, Quincy Jones, Herbie Hancock, Sonny Rollins, Keith Jarrett, Ornette Coleman, Chris Potter, Herbie Hancock, Wynton Marsalis, Dizzy Gillespie, Tony Bennett e Tito Puente. Katz ha realizzato più di 30 CD e ha registrato artisti come David S. Ware, Mark Turner, Chris Potter, Jason Palmer, Eric Alexander, Miles Okazaki, Linda May Han Oh, Johnathan Blake, Ari Hoenig, Lage Lund e Frank Kimbrough.
